Extra virgin olive oil of the variety Cima di Melfi
The "Cima di Melfi" is a particularly rare variety of olive. It grows in the area of Gioia del Colle and in the area of Melfi in Basilicata, from where it takes its name.
Our oil is from the Azienda Vini Santoro near to Grottaglie. It is normally not for sale - only for some Restaurants in the near. The Quantities are not so high - so this is really a handmade and very rare product!
The olive's outstanding qualities are still little known, and olive growers are particularly proud of such a fine and rare oil. Its elegant and broad bouquet pairs with many different flavor nuances.
Surprising apple and mint tones, a pleasant bitterness that almost masks the effervescence typical of this oil, and a unique artichoke note complete the flavor profile.
It is a special oil used mainly for dressing strongly spiced dishes or as the main dressing for rice salad.
